There should be a noteblock button in the toolbar on the overworld editor. From there you can change the music that is to be played on the main overworld or on the individual submaps.
If you mean changing, as in adding in new overworld music, you will have to insert them via an addmusic program such as Romi's or Carol's addmusic.
