I don't have so many.
For the SNES:
ZSNES - My personal favourite
Snes9X - I use it only to test the compatiability. In other words, I don't like this emulator.
For the NES:
FCEUX - I'm using it to play the original Super Mario Bros. and the original NES Metroid.
For the Gameboy Normal/Color/Advance:
VisualBoyAdvance - A good emulator.
This is it. I have 4 emulators in total.

I stick to a "relatively small" subset of emulators - generally, the most accurate I can find for whatever machine I wish to emulate on whatever platform. I've used plenty of emulators for plenty of systems, however... pretty exhaustive list below.
Also, note: I generally try to avoid Bannister's OS X emulators whenever possible. Porting others' emulators and crippling them to try to profit is not cool. Sure, you don't have to pay for Emulator Enhancer, but the nag dialog irritates me and the principle isn't very sound.
Atari 8-bit series (XL, XE, 800, etc...): Altirra (Windows), Atari800 (Mac OS X PPC/Intel)
Commodore 64: WinVICE (I'm not aware of decent Mac OS X or Linux emulators... mainly because I haven't looked, though.)
Amstrad CPC: WinAPE. (I don't know of any Mac OS X or Linux emulators that also emulate the SYMBiFACE 2...)
ZX Spectrum: Spin (Windows), zxsp (Mac OS X PPC/Intel), ZXDS (Nintendo DS). I tend to prefer doing my emulation on zxsp, though.
MSX: blueMSX (Windows). I can't remember the last time I've actually done MSX emulation, though.
Commodore Amiga: UAE variants, though I've had the best luck with WinUAE.
Atari ST: Steem Engine (Windows), Hatari (Windows, Linux, Mac OS X PPC/Intel)
Atari Falcon: Hatari (Windows, Linux, Mac OS X PPC/Intel. ...Not like I've done much, though.)
680x0 Macintosh: BasiliskII (Windows, Linux, Mac OS X PPC/Intel)
Power Macintosh: SheepShaver (Windows, Linux, Mac OS X PPC/Intel)
NES: Nestopia (Windows), FCEUX (Mac OS X PPC/Intel, Linux)
SMS: Kega Fusion (Windows and Mac OS X Intel-only, do not know of a usable Linux emulator)
SNES: bsnes (though only v072 and on Windows), Snes9x (Mac OS X PPC/Intel, Linux) ... Am I the only one who never uses ZSNES?
Genesis: Kega Fusion (Windows and Mac OS X Intel-only, do not know of a usable Linux emulator. Dgen doesn't count.)
TurboGrafx-16: Magic Engine, Turbo Engine. (I can't remember the last time I fired up either.)
PlayStation: ePSXe (Windows). Can't remember the last time I fired it up.
Nintendo 64: Project64 (Windows), Mupen64 (Linux). I know sixtyforce exists on Mac OS X, but I haven't used it.
PlayStation 2: pcsx2. I use this for playing my PS2 discs, as I no longer have a PS2. It runs startlingly well on a mid-range PC. (Core 2 Duo E4700, 2GB of RAM, GeForce 9500GT to give you an idea.)
Game Boy/Color: bgb (Windows). Don't know of any good Linux/OS X emulators.
Game Gear: Kega Fusion (Windows, Mac OS X Intel)
Lynx: I know I've emulated the Lynx, but I can't for the life of me remember what I used... Handy, if I'm remembering right, and probably on the PSP only.
Game Boy Advance: VisualBoy Advance. (Windows, Mac OS X PPC?) I do not like the NO$ line of emulators.
Nintendo DS: iDeaS. ...Of course, I've always run things on real hardware, owning an R4...
...Wow. Hell of a lot of emulation software, there.

Are there any Playstation emulators that support remapping of hotkeys?
Such as Save State, Load State, and Exit... which I would like to remap to my gamepad.
I use mednafen for NES, Genesis, Gameboy and GBA, which works great for me because it allows remap of those hotkeys

Good question, most games that I want to play, I simply purchase.
On the occasion that I want to play a super rare game, I'll actually boot up an emulator, but this happens about once every few months.

Several people have no SNES emulators but ZSNES? It will suck for you guys when you come across a game or hack that it can't emulate properly....
I added a few more to the list. I'm back to using ePSXe for PlayStation games, since apparently the new version has far fewer plugins to worry about. I still haven't updated my main version of bsnes to 0.85, since as far as I know, Alcaro hasn't added headered ROM support to it yet (and I hate compiling things from source, but whatever).

Anyway, on PC:
-SNES9x (can't get sound to work...)
-ZSNES (to test my hacks)
-VBA (used with my Super Mario World Advance project to rip palettes)
On Wii:
-SNES9x GX (wish it had savestates...)
-VBA GX
-FCE Ultra GX
-Wii64 (can't get it to work)
-DeSmuMe Wii (haven't used it once yet )
