For whatever reason, custom sprites are using the end of the OAM (thus causing the sphere to only half appear), when there's plenty of space before. Any way to fix this? Or is it a SMW/Spritetool limitation?

Try a different sprite header setting that gives sprites more tiles? Or write to the OAM manually rather than letting get_draw_info give you an index. Looks like a boss so hardcoding its OAM shouldn't be a big deal.
As I recall, sprites are stuck in $9E starting at the top (it's been a while so I might be wrong here). So the first sprite in the level will be given the top available OAM position. If you want to change that, you'll have to stick some sprites in front of it or spawn it somehow else.

Well, I guess it was a problem with too many tiles on screen, plus it seemed to only happen when I manually placed the vine; if I spawned it then the problem didn't occur. I patched No Sprite Limits and all is working well, for now at least.
