Zombies Ate My Neighbors. It will change your life forever.
Also Yoshi's Island and Gradius III. If you want a Street Fighter game, go for Street Fighter II Turbo. Chrono Trigger, Breath of Fire, F-Zero, Earthworm Jim, and R-Type III are all great games to get as well.

Do yourself a favor and get Super Mario RPG immediately. Follow through with Parodius, and then for desert, all three Super Star Wars games. Especially Super Return of the Jedi. You WON'T regret it!

For multiplayer I highly recommend Super Bomberman, Contra 3, Super Smash TV, and Tetris Attack. For RPGs (I'm guessing you only want English ones), I highly recommend Chrono Trigger, Breath of Fire 1 and 2 (especially 2, but the localizations suck for both), Lufia 1 and 2 (especially 2 again), and Earthbound. For Action-RPGs, Secret of Mana, Secret of Evermore, Soul Blazer, Illusion of Gaia, and Terranigma are all highly recommended.
Also for platformers, Plok! is a rare and little-known game but it is incredible.
