For a long time today, whenever I make a hex edit to my game, it completely erases every edit made since I last copied it to somewhere else. I've lost complete levels this way! Is this a bug in LM or is my computer acting like a bitch again?
It seems like it could be your computer. I have never had any kind of a glitch like that.

Always be sure to save your levels as .mwl files so you can recover them later. ;)
Close all programs while hex editing, and close the hex editor when making levels.

That could explain it a little. I had A TON of things open.
Check out my Youtube channel! 獣耳 Brony for life.
Yeah, I believe Translhexation (as well as BTSD, maybe some other tools) will revert to your changes saved when Lunar Magic was last open. I always close Lunar Magic when hex-editing and re-open it when I'm done.
As iceyoshi said With BTSD and Translhexation they make rom backups right when you open a rom in them. This causes those programs to use the back up version in a sense when you have Lunar Magic still open. This will revert all the work you have done so when Lunar magic is open make sure to close BTSD and Hexation and when either of those programs are open close Lunar Magic.
This has happened to me before and I know why. Do you have Translhextion open with your ROM while saving it in Lunar Magic or editing it with another program? There's nothing wrong with that, except that Translhextion will not show the new changes automatically, it will still have the old version of the ROM displayed, so if you don't reopen the ROM in Translhextion before making a hex edit then saving, it will overwrite the changes made by Lunar Magic.
