I have some questions about musc porting.

1 - How to make a SPC of a music I ported?

2 - There's any trick/hint/etc to know the right instruments for a port?

3 - How to make a tottaly custom music? If there are various ways, what is the best one of them? If it needs a program, what is it?
1. Press F1 in ZSNES.
2. Listening to the original on Youtube or something is the best way I can think of.
3. A couple of ways:
a) write the notes directly into the text file
b) use a MIDI editor like Anvil Studio or FL Studio to make a MIDI to port

The easiest way to start would probably be with Anvil Studio, of course this is assuming you don't know how to use either. If you know how to use FL Studio, then use that.

1) SNES9X also has an SPC-ripping function, although it takes more time (File -> Save Other -> Save SPC Data). Testing music in ZSNES is a very bad idea anyway.
2) If you're porting from a SNES game, it helps a LOT to have this SPC player, which allows you to listen to a single channel at a time.
3) I can't think of anything that MarioStarLuigi didn't already say.
